Springerli Cookies

These are a traditional German Christmas Cookie. This recipe was my Grandpa George's recipe.

You have to have Springerli molds to make these cookies correctly.

  • 2 cups of sugar
  • 4 eggs beaten
  • 4 1/2 cups of cake flour
  • 4 drops of anise oil

1. Beat whole eggs till thick. Add sugar gradually beating well between each addition until all is combined and then beat well for 15 minutes. This makes the finished cookie fine grained and light.

2. Add anise oil and blend.

3. Fold in flour lightly.

4. Roll out the dough about 1/2 inch thick.

5. Flour mold an dcarefully press firmly into dough.

6. Remove mold and cut the cookies along the line of print.

7. Place on a greased cookie sheet.

8. Flour mold each time it is used.

9. Let cookies stand overnight in a cool place to dry.

10. In the morning, place in a moderate oven (375 degrees). In 15 minutes the cookie should be light in color with appearances of having been iced.

Keep cookies in a tight can for 2 to 3 weeks before using to have best flavor. To soften them, put a cut apple in the can a day or two before using. Apple also adds a delightful aroma to the cookies.

Makes about 72 cookies

Chinese Almond Cookies

INGREDIENTS

* 1 cup butter (no substitutes), softened
* 1 cup sugar
* 1 egg
* 1 teaspoon almond extract
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/4 cup sliced almonds
* 1 egg white
* 1/2 teaspoon water


DIRECTIONS

1. In a mixing bowl, cream butter and sugar. Beat in egg and extract. Combine the flour, baking soda and salt; gradually add to creamed mixture. Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten with a fork. Sprinkle with almonds.

2. In a small bowl, beat egg white and water. Brush over cookies. Bake at 325 degrees F for 14-16 minutes or until edges and bottoms are lightly browned. Cool for 2 minutes before removing to wire racks.

For a more almond flavor double the amount of almond!

Oatmeal Banana Raisin Coconut Cookies

INGREDIENTS

* 1 1/4 cups margarine
* 3/4 cup firmly packed brown sugar
* 1/2 cup white sugar
* 1 egg, lightly beaten
* 1 teaspoon vanilla extract
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/8 teaspoon ground cloves
* 3 cups rolled oats
* 2 ripe bananas, sliced
* 1 1/2 cups raisins
* 1 cup flaked coconut

DIRECTIONS

1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

2. In a large bowl, cream together the margarine, brown sugar and white sugar. Beat in the egg and vanilla. Combine the flour, baking soda, salt, cinnamon, nutmeg and cloves; stir into the creamed mixture until well blended. Stir in the oats, bananas, raisins and coconut, one at a time using a wooden spoon. Drop by rounded spoonfuls 2 inches apart onto the prepared cookie sheet.

3. Bake for 11 to 13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 1 minute before removing to a wire rack to cool completely.

Yields: 4 dozen cookies

Ginger and Spice Cookies

INGREDIENTS

* 4 cups sifted all-purpose flour
* 3/4 teaspoon baking soda
* 3/4 teaspoon ground ginger
* 1 1/2 teaspoons ground cinnamon
* 1 1/2 teaspoons ground cloves
* 1/2 teaspoon salt
* 2 eggs
* 1/2 cup unsulfured molasses
* 1 1/4 cups white sugar
* 1 cup unsalted butter
* 1 teaspoon vanilla extract

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).

2. Cream the butter with the sugar until light and fluffy. Stir in molasses and eggs. Stir in vanilla. Sift together the flour, baking soda, ginger, cinnamon, cloves and salt. Gradually stir into the butter mixture. Lightly cover a piece of wax paper with sugar. Drop tablespoon-sized pieces of dough onto paper and coat with sugar.

3. Bake 14 to 15 minutes in the preheated oven, or until golden brown. Let cool on wire racks.


Yield 5 dozen cookies

Apple Jack Cookies

Oh my gosh these cookies are so easy and so good.

Ingredients:
1 cup light brown sugar
1/2 cup shortening
1 egg
1 1/2 cup flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. nutmeg
1 cup chopped unpeeled apple

Directions:
1. Cream together sugar and shortening
2. Beat in egg
3. Sift dry ingredients, add to mixture
4. Blend well
5. Stir in apples
6. Drop in the shape of balls on a greased cookie sheet

Bake at 375 degree for 12-15 minutes.
Makes 36 cookies
